li'l ole winemaker pot roast

This is a recipe that my mother got from a friend and it is the most delicious pot roast ever! And so simple! Everyone loves it. The gravy it makes is to die for! I never make beef roast any other way! It can also be made in a slow cooker, just remove the roast when done, move the liquid to a pot or pan, and thicken as directed.

Ingredients

  • 1/4 cup cooking oil
  • 4 - 5 pounds beef rump roast or your favorite beef roast (i find a chuck roast is best)
  • 1 cup soy sauce (i use low sodium)
  • 2 cups water
  • 1 package dry onion soup mix
  • 1/2 cup sugar
  • 1 cup dry sherry
  • 3 tablespoons cornstarch

How To Make li'l ole winemaker pot roast

  • Step 1
    On stovetop, brown meat on all sides in oil in Dutch Oven or roasting pan.
  • Step 2
    In a medium mixing bowl, combine soy sauce, water, onion soup mix and sugar. Pour over meat.
  • Step 3
    Simmer, covered, at 350 degrees for 2 1/2 - 3 hours or until tender. Add sherry during last hour of cooking.
  • Step 4
    When meat is tender, remove to a platter. Bring cooking liquids to a boil. In small bowl, mix cornstarch and 1/2 cup water until smooth. Stir into boiling liquid, stirring until thickened and glossy. Serve with roast.
  • Step 5
    These days I make it in my slow cooker and move the liquid after cooking to a pot on the stovetop to thicken.
