Ingredients

  • 1 - chicken, 3 to 3 1/2 lbs., cut up
  • 1 dash salt
  • 1 dash black pepper
  • 3 tablespoons fresh chopped basil or 2 tsp. dried basil leaves
  • BASTING SAUCE
  • 2 tablespoons oil or melted butter
  • 3/4 cup tomato ketchup or chili sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced or pressed

How To Make herb -tomato grilled chicken (microwave version)

  • Step 1
    Trim off excess fat from chicken pieces.
  • Step 2
    Place chicken on a microsafe rack or in a pie plate.
  • Step 3
    Sprinkle chicken with salt, pepper and basil leaves.
  • Step 4
    Combine ingredients for basting sauce.
  • Step 5
    Microwave chicken at HIGH power for 2 to 3 minutes.
  • Step 6
    Remove from microwave. Baste chicken with sauce on both sides.
  • Step 7
    Microwave chicken at HIGH power for 10 to 12 minutes, turning pieces over after 6 minutes and basting again with sauce on both sides.
  • Step 8
    Check for doneness. Juices should run clear when pierced with a fork.
  • Step 9
    Let chicken stand at least 5 minutes before serving.
