Ingredients

  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1/3 cup butter
  • 2 cups onions, sliced
  • 2 tablespoons ground cardamom
  • 1/4 cup garlic, sliced
  • 3 tablespoons ginger, finely chopped
  • 2 quarts fire roasted tomatoes
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons curry powder
  • 1 1/2 cups cream
  • 1/2 cup bread crumbs
  • 1/3 cup cream
  • 2 tablespoons curry powder
  • 2 tablespoons butter
  • 3 tablespoons ginger, peeled and minced
  • 3 tablespoons garlic, minced
  • 2 pounds ground beef
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 3 cups whole milk yogurt
  • 1 1/2 cups cucumber, peeled, seeded and finely diced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper

How To Make curried meatballs

  • Step 1
    Sauce directions: In a small saute pan, toast coriander, cumin seeds and cardamom until you begin to smell the spices.
  • Step 2
    In a large sauce pot, melt butter and saute onions until translucent.
  • Step 3
    Add ginger and garlic, cook until you smell both.
  • Step 4
    Add seasonings and tomatoes. Cook over low heat for 30 minutes.
  • Step 5
    Using an imersion (stick) blender or food mill, blend ingredients until smooth. Add cream and cook 10 minutes on low.
  • Step 6
    Meatball directions: Place bread crumbs and cream in a large bowl. Let sit until soft, approximately 20 minutes.
  • Step 7
    In a small saute pan, heat curry powder, shaking pan constantly until you smell the curry. Set to the side.
  • Step 8
    Melt butter in a saute pan, add garlic and ginger. Cook until tender.
  • Step 9
    Mix meat, bread crumbs and spices until well blended. Form into meatballs, making sure that all meatballs are the same size. Place in mini muffin tins or on a cooling rack that is placed on a cookie sheet. Bake at 375 for 20 to 25 minutes or until cooked through.
  • Step 10
    Add to sauce and simmer 10 minutes. Serve over steamed rice. Top with Raita, if desired.
  • Step 11
    Raita directions: combine the yogurt,cucumbers and spices. Add more seasoning to taste. Serve as a condiment.
