Ingredients
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 1/3 cup butter
- 2 cups onions, sliced
- 2 tablespoons ground cardamom
- 1/4 cup garlic, sliced
- 3 tablespoons ginger, finely chopped
- 2 quarts fire roasted tomatoes
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 tablespoons curry powder
- 1 1/2 cups cream
- 1/2 cup bread crumbs
- 1/3 cup cream
- 2 tablespoons curry powder
- 2 tablespoons butter
- 3 tablespoons ginger, peeled and minced
- 3 tablespoons garlic, minced
- 2 pounds ground beef
- 1 tablespoon salt
- 2 teaspoons ground black pepper
- 1/2 teaspoon cayenne pepper
- 3 cups whole milk yogurt
- 1 1/2 cups cucumber, peeled, seeded and finely diced
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
How To Make curried meatballs

Step 1Sauce directions: In a small saute pan, toast coriander, cumin seeds and cardamom until you begin to smell the spices.

Step 2In a large sauce pot, melt butter and saute onions until translucent.

Step 3Add ginger and garlic, cook until you smell both.

Step 4Add seasonings and tomatoes. Cook over low heat for 30 minutes.

Step 5Using an imersion (stick) blender or food mill, blend ingredients until smooth. Add cream and cook 10 minutes on low.

Step 6Meatball directions: Place bread crumbs and cream in a large bowl. Let sit until soft, approximately 20 minutes.

Step 7In a small saute pan, heat curry powder, shaking pan constantly until you smell the curry. Set to the side.

Step 8Melt butter in a saute pan, add garlic and ginger. Cook until tender.

Step 9Mix meat, bread crumbs and spices until well blended. Form into meatballs, making sure that all meatballs are the same size. Place in mini muffin tins or on a cooling rack that is placed on a cookie sheet. Bake at 375 for 20 to 25 minutes or until cooked through.

Step 10Add to sauce and simmer 10 minutes. Serve over steamed rice. Top with Raita, if desired.

Step 11Raita directions: combine the yogurt,cucumbers and spices. Add more seasoning to taste. Serve as a condiment.
