It's rhubarb time in my part of the world and I'm finding all kinds of ways to use it!

Ingredients

  • 1 cup chopped rhubarb
  • 1 lemon, juice and zest
  • 1/2 cup sugar
  • 1 cup water
  • 1/2 cup lemon juice (use from your zested lemon)
  • 4-5 cups crushed ice
  • water

How To Make rhubarb lemonade

  • Step 1
    Simmer rhubarb, lemon zest, sugar and 1 cup water in a small pot and until the rhubarb falls apart, about 10 min. Pour the mixture through a sieve-save the liquid and discard the solids.
  • Step 2
    Add the ½ cup lemon juice and stir.
  • Step 3
    Fill a pitcher with crushed ice and pour the hot liquid over. Stir to cool the lemonade. Add as much water as necessary to desired strength.
