Saw this in one of my magazines-Taste of Home- tried it- delicious!

Ingredients

  • 4 1/2 cups sliced fresh strawberries,divided
  • 2 tablespoons granulated sugar
  • 3 packages (3 oz. each) ladyfingers, split
  • 4 packages (8 oz. each)cream cheese,softened
  • 2 cups granulated sugar
  • 2 cups heavy whipping cream

How To Make ladyfinger cheesecake by toh

  • Step 1
    In a large bowl, combine the strawberries and 2 Tablespoons sugar, Cover and refrigerate for a least 1 hour.
  • Step 2
    Using a sprayed or greased 10-inch springform pan, arrange 25 split ladyfingers around the edges of the pan. Place 25 more on the bottom of the pan ; set aside.
  • Step 3
    In a large bowl, beat the cream cheese and 2 cups of sugar until smooth. In another large bowl, beat the heavy cream until stiff peaks form. Gradually fold this into the cream cheese mixture.
  • Step 4
    Spoon half of the cream cheese mixture into the prepared pan. Spread with 1/2 of the strawberry mixture to within 1 inch of edges. Cover; refrigerate remaining strawberries.(reserve a bit of the berries).
  • Step 5
    Arrange remaining ladyfingers over top. Spoon remaining cream cheese mixture over ladyfingers. Cover; refrigerate overnight. Serve with reserved strawberry mixture.
