small batch peanut butter cookies

I down-sized the recipe I got from my Mom over 50 years ago to make fewer cookies for just the two of us.

Ingredients

  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar, firmly packed
  • 1/3 cup shortening
  • 1/3 cup peanut butter
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons water
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 cup all purpose flour

How To Make small batch peanut butter cookies

  • Step 1
    In a medium-size bowl cream together the sugars, peanut butter and shortening. In a small cup dissolve the baking soda in the water, add the vanilla and egg, slightly beat together and stir into the creamed mixture. Add the flour and mix well.
  • Step 2
    Roll dough into 2 1/2 balls or drop from cookie scoop onto an ungreased cookie sheet. Flatten with a fork or meat mallet which has been dipped in flour. Bake at 375 degrees for 10-12 minutes or until lightly browned. Remove to rack to cool.
