German Apple Cake (with Apple Chunks)

I found this recipe for my dad last year, it is so good I just had to share it!

1 c
vegetable oil
2 c
white sugar
2 tsp
ground cinnamon
1/2 tsp
1 tsp
vanilla extract
2 c
all purpose flour
1 tsp
baking soda
4 c
apples- peeled, cored and diced


1preheat oven to 350. grease 9x13 inch cake pan
2in a mixing bowl beat oil and eggs with electric mixer until creamy. add sugar and vanilla and beat well
3combine the flour, salt, baking soda and ground cimmamon together in a bowl, slowly add egg mixture and mix until combined, the batter will be very very thick
4fold in the apples with a wooden spoon. spread batter into the prepaired pan, bake 350, for 45 minutes or until cake tests done, let cool on wire rack. once cake is cool serve with a dusting of powdered sugar or with cream cheese frosting.
