You won't find this recipe in any book anywhere, It is my own design, I wanted to make something like a muffin with what I had on hand... Here it is, so good and moist.. Don't know it is almost cake like.. so muffin or cupcake.. what ever you want to call it ..it is GOOD!!

Ingredients

  • 1 can carrots,drained
  • 2 - eggs
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 cup canola oil
  • 1/4 cup sour cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1/2 teaspoon orange extract (just for fun) adds a good flavor
  • 2 cups healthy heart bisquick

How To Make tammy's carrot muffins

  • Step 1
    First I mashed the carrots, then added the sugars, eggs, oil and sour cream. Mixing well. Then I added the spices and flavorings, mixing well. Lastly I added the bisquick stirring well.
  • Step 2
    I used a 12 cup muffin pan, filled 3/4 full, bake at 325* for about 20 minutes. top should bounce back when pressed in the middle. They are light colored.
  • Step 3
    I don't use papers, I just spray pan with pam. So I'm not sure how it would work with papers, but I don't see why it wouldn't.. also I just served these warm with butter and honey. But since they are so cake like, I think you could frost them with a cream cheese frosting if you'd like. ENJOY!!
