stuffed zuchini with crabmeat

my whole family loves it because it can be served as an appetizer for almost any meal. great for italian and seafood meals!

Ingredients

  • 4 medium green or yellow zuchini
  • 1/2 medium tomatoes,chopped
  • 1/2 medium sweet onion,chopped
  • 1/2 cup chopped mushrooms
  • 4 cloves garlic,chopped
  • 4 ounces chopped crabmeat, can be imitation
  • 1 tablespoon lemon juice, or juice from one lemon
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • - italian seasoning
  • - parmasan cheese for sprinkle on top
  • - salt and pepper to taste

How To Make stuffed zuchini with crabmeat

  • Step 1
    Preheat oven to 350 degrees, cut zuchini lengthwise, scoop out inners and chop. put about a cup of water in a good size pt to fit the zuchini in and boil the water slowly. Put zuchini in and blach for aboout 10 minutes. In a saute pan, add oilve oil,onions and garlic. cook until onions are transparent. Add all other ingredients except tomatoes and crabmeat. Saute until lightly browned. Add tomatoes,chopped pulp from zuchini, and cook until liquid is almost gone. Add crabmeat and cook until well blended. The zuchini should now be blanched. Take out of water and rinse under cold water to stop the cooking process.Put zuchini in greased baking pan. Put the mixture in the zuchini and dot with butter. Sprinkle with parmesan cheese and bake about 25 minutes or until lightly browned on top. Serve and Enjoy!!
