pickled pearl onions
Very popular pickled onions are great on salads, tacos, sandwiches, whatever. I like to give it a couple of days to refrigerate for best flavor. Adapted from Curtis Stone.

Ingredients
- 10 ounces fresh pearl onions (red or white)
- 1/3 cup fresh lime juice
- 1/4 cup white vinegar
- 1 teaspoon kosher salt
How To Make pickled pearl onions

Step 1Trim ends from the onions.

Step 2Bring a saucepan of water to a boil and add onions; boil one minute then drain under cold water.

Step 3Slip off the outer skins by squeezing gently or use a paring knife to assist.

Step 4Whisk together the remaining ingredients and add onions.

Step 5Refrigerate until needed; the longer they sit, the better.
