Sure Deborah...here's the "Potato Flake Starter" recipe.
3 T instant mashed potato flakes
3 T white sugar
1 c warm water
2 1/4 t active dry yeast
Combine instant potatoes, sugar, water, and yeast in a covered container with a tight lid.
Let the starter sit on a counter for 5 days, stirring daily with a "wooden spoon", (never use a metal bowl or metal spoon as it effects the yeast in this method).
On the morning of the fifth day, feed the starter with 3 tablespoons instant potatoes, 3/4 cup sugar, and 1 cup warm water.
Then that evening, take out 1 cup of the starter to use in a sourdough recipe.
Refrigerate the remaining starter.
REMEMBER....every five days, feed the starter 3 tablespoons instant potatoes, 3/4 cup sugar and 1 cup warm water.
If starter IS to be used in a recipe, let the fed starter rest at room temperature 6 hours before using.
If starter is NOT being used in a recipe, keep refrigerated and discard 1 cup of starter "after each feeding".
You can always pass along the 1 cup to a friend if you don't want to make some bread on the day designated for using.
Be sure to tell them they will need to let it sit for 5 days in order to have their own starter.
AND to discard/dispose of one (1) cup of the starter OR make bread with one (1) cup of starter 12 hours after every feeding.
Thank you so much for the starter, I will definitely use it.I love with this recipe It's always handy, but If you don't mind, can I also have the recipe for the starter with the potato flakes, I did use the flakes in my other recipe and I would love to use it in a starter and see how it works for me. I'd like to try a recipe that doesn't need the dry yeast.
Again thanks a lot.
Debbie
