We Made A Ganache That I Whipped Up And Spread Over The Cake. It Started Out Pudding Like. To Get The Ganache To The Right Consistency, I Put The Bowl In An Ice Bath And Whipped It With The Mixer. Spread Fast, Because The Ice Cream Will Start Melting. When You Bake Your Cake, Allow It To Cool Then Cut It In Half. After Cutting It In Half Place The Sponge In Your Freezer.i Lined The Cookie Sheet With Parchment Before Placing The Bottom Piece On. Then Put Another Piece In Between The Cut Pieces. Buying The Ice Cream That Comes In The Square Box Makes This So Much Easier.it Is Just Slice And Place.for A Store Brand, This Is The Best Mint Chip! The Top And Sides Have Been Removed From The Ice Cream. Take Apart The Box So You Can Get To The Ice Cream. We Decided To Go With A Filling Of The Mint Chocolate Chip Ice Cream. Well...randy Decided...=) I Just Trimmed The Edges Of The Ice Cream. Start Slicing. Slice Fast.this Is A Very Creamy Ice Cream.i Have To Put This In My Down Stairs Freezer So It Will Be Brick Like!that Is Randy Doing The Slicing For Me...=) Keep Slicing...=) Place The Second Piece On Top. Repeat The Same Steps. Randy And I Slightly Disagreed On The Thickness Of The Top Layer Of Ice Cream...=) It Was His Cake...sooooo Almost There.... Cover The Cake And Place It Back In The Freezer.we Decided (meaning I) That Middle And Top Was Enough Ice Cream. We Have Done The Cake All The Way Around. This Is Half The Cake And What We Have Left After Cutting 12 Slices. We Had Company...=) Thumbnail For Mint Chocolate Chip Ice Cream Cake With Ganache Filling
