I made this Russian Apricot Chicken for dinner tonight in my Instant pot and it turned out amazing. I couldn’t believe how such a simple dish could have so much flavor. The chicken came out tender and the sauce has a light sweet taste from the sauce similar to a cross between sticky chicken, Chinese bbq chicken, and sweet and sour chicken, I didn’t have any bottled Russian dressing so I made some from a home recipe I have and then added it instead. it worked out great! Everything else I did exactly by the recipes except I cooked 8 pieces of chicken instead of 6.. It made a ton of sauce so it it was extra delicious over the rice I made.
