This Vietnamese Chicken Salad Is One of My Favorite Easy Summer Suppers

"G?i gà is fresh and tangy and everything I want to eat right now...."

INGREDIENTS
1 pound boneless, skinless chicken breasts (about 2 medium)
1 teaspoon kosher salt
1/2 medium red onion
2 tablespoons rice vinegar
1/2 medium green cabbage (about 1 1/2 pounds)
1 large carrot (about 6 ounces), or 1 1/2 cups pre-shredded carrots (4 ounces)
1/2 bunch fresh cilantro
1/2 to 3/4 cup fried shallots
Prawn chips, for serving (optional)
1 clove garlic
1 to 2 medium limes
1/3 cup rice vinegar
2 tablespoons fish sauce
2 tablespoons granulated sugar
