Tasty Spam Fried Rice

INGREDIENTS
2 cups leftover cooked white rice (preferably long-grain rice such as jasmine rice)
2 eggs, beaten
1 tablespoon sesame oil
1 can of spam meat (about 7 oz.), cut into half-inch cubes
2 cups mixed vegetables (blend of corn, carrots, green beans & peas)
1 tablespoon of oil for stir-frying
salt and pepper to taste
1 stalk green onion, chopped for garnish
