INGREDIENTS

½ cup mayonnaise

2 tsp ketchup

2 tsp horseradish

1/2 tsp paprika

pinch cayenne pepper

2-3 cups canola or vegetable oil, for frying

1 cup buttermilk
•
½ Tbsp hot sauce (I used Frank’s Red Hot)

½ Tbsp Worcestershire sauce

2 eggs
•
1 cup all-purpose flour
•
1/2 cup cornmeal
•
½ Tbsp Cajun seasoning
•
1 tsp chili powder
•
1 (32 oz) jar dill pickles, cut into 1/2" slices (crinkle cut are ideal, but straight cut work, too)

kosher salt, to taste
