Turkey - Vegetable Soup

1 Tbsp
butter or olive oil
onions, chopped
garlic cloves, crushed
20 oz
chicken broth
1/2 c
water or 5 cups turkey stock
1/2 tsp
poultry seasoning
1 c
small or medium egg noodles
2 lb
frozen mixed vegetables
2 c
leftover turkey, bite-sized


1Melt butter in a large saucepan set over medium heat.

2Add onions and garlic.

3Cook, stirring often, for 5 minutes.

4Add chicken broth and water or turkey stock, and poultry seasoning.

5Bring to a boil over high heat.

6Stir in noodles.

7Return to a boil, then reduce heat to medium.

8Boil gently, uncovered, stirring often, for 10 minutes.

9Add frozen vegetables and turkey.

10Cover and simmer just until hot, about 2 to 3 minutes.
