Tea Room Pumpkin Soup

This is one of my favorite autumn soups from one of my favorite tea rooms.

Ingredients

3 oz
butter
1/2 c
sweet yellow onion, chopped
1.2 c
ap flour
4 c
chicken broth
1 can(s)
15 ounce solid pack pumpkin
2 c
heavy cream
1/4 c
apple juice
salt & white pepper to taste

Step-By-Step

1Over medium heat, saute onion in butter until translucent. Add flour and cook 2 mins. Slowly add broth. Add pumpkin. heat mixture thoroughly. Pureee and cream. Add apple juice and seasonings.
2Granish with sour cream or parsley. Toasted pumpkin seeds make a nice topping too added right before serving.
