Spinach & Potato Soup

There is nothing like spinash and sausage together. I usually don't add the celery.

2 slice
bacon, cut up
1/2 c
onion, chopped
2 c
chicken broth
2 c
potatoes, diced
1/4 c
carrot, finely chopped
1/4 c
celery, finely chopped
1/4 c
white wine, dry
1.5 tsp
thyme, fresh chopped
1.5 tsp
sage, fresh chopped
1/2 tsp
2 lb
spinach, fresh and chopped
2 c
1/2 c
parsley, fresh and chopped
1/4 lb
chorizo sausage, cooked links, sliced


1Cook and stir bacon in 3-quart saucepan until crisp.

2Remove bacon with slotted spoon and drain; reserve fat in saucepan.

3Cook and stir onion in fat until tender.

4Stir in broth, potatoes, carrot, celery, wine, salt, thyme, sage and pepper.

5Heat until boiling; reduce heat.

6Cover and simmer for 30 minutes.

7Stir in half of the spinach and cook for 2 minutes.

8Stir in remaining spinach; cover and cook until spinach is just wilted, about 2 minutes.

9Stir in milk, parsley and bacon; heat just until hot - Serve with sausage.
