Simple Broccoli Cheese soup
Fall turns me into a soup junkie. This season both myself and hubby are under the weather so I spend a lot of time thinking about comfort food that makes you feel warm and cozy all over. I needed fast soups as I do not feel well enough to spend all day in the kitchen. Thus this recipe was born. 30 minutes and not much standing time and dinner was served.
- 12 oz
- chopped frozen broccoli
- 1/2 Tbsp
- onion flakes, dehydrated
- garlic powder
- 4 c
- 1/2 stick
- 1 pkg
- cheese powder from mac and cheese box (save noodles for another recipe)
- 1/4 c
- 1 c
- salt and pepper to taste
1Simmer broccoli, onion flakes, garlic and butter in 4 cups of water about 30 minutes or until desired tenderness for you. Do not drain!
2mix the flour, cheese powder and milk together until well blended. (I use my tupperware gravy mixing cup)
3slowly pour flour/cheese mixture into broccoli mixture. let simmer until thickened. You may add milk if you prefer thinner soup. Salt and pepper to taste.
4Serve warm with cornbread for a perfect meal!
