This can easily be made with cabbage, pasta, corn, peas, beans or carrots. Leftover vegetables are a great addition...and easy.

Ingredients

2 qt
tomatoes, fresh or canned, diced
4-6
potatoes, peeled, cubed
2 stalk(s)
celery, diced

okra, fresh or frozen
1 medium
onion, chopped
salt and pepper
2 Tbsp
bacon fat or oil

Directions Step-By-Step

Combine all ingredients, except for the okra, in an 8 quart pot. Cook on medium heat, 30 minutes. Add okra; cook 30 minutes or until potatoes are done.
