Potato and Ham Soup (from leftover boiled dinner)

I make this soup with left overs from boiled ham dinner. Sometimes I make the dinner just to have this soup...prep time is time making boiled diner

Ingredients

2 slice
bacon (chopped)
1
onion (chopped)
2 Tbsp
butter
1/4 c
flour
1/2 tsp
rosemary, dried
1 tsp
dill, dried
salt and pepper
5
cooked potatoes
1 c
cooked carrots, diced
1 c
cooked parsnips, diced
8 c
chicken broth
1 cup
cooked diced ham
1/2 c
cream or milk
1/2 c
shredded chedder cheese (for garnish)

Step-By-Step

1render bacon on large pot and add onion and cook till onion is almost carmelized, add butter and flour and cook til golden in color
2add spices
3add Chicken stock, potatoes, carrots and parsnips.
mash or use emersion blender to break down veggies
4cook to a boil and then add cooked ham cook 5 min to heat though
5remove from heat and stir in cream.
6serve and top with 1 to 2 Tbls. cheese
7serve with chedder biscut...yummy
