Ingredients

2 1/4 Tbsp
olive oil, extra virgin
1 medium
onion chopped
1/4
green pepper chopped
1/4
sweet red pepper diced
1/4
sweet yellow pepper diced
1/4
sweet orange pepper diced
2 clove
minced garlic cloves
1 Tbsp
dried basil
1 tsp
dried oregano
1/2 tsp
red peper flakes
few pinch
dried parsley flakes
1/2 c
uncooked minute rice/or reg.
1 can(s)
14 oz. petite cut tomatos. any flavor
6 c
chicken broth
1/2 c
of wine. optional..
4 oz
mini pepperoni
provolone cheese slices
fresh parmesan cheese

Step-By-Step

1In a heavy pan heat olive oil
2Saute' onion and pepper until soft and garlic
3Add oregano,basil,crushed red pepper, parsley,rice, tomatoes and juice, broth,wine if using it..
4Bring to a boil, lower heat and simmer covered for 20 min. or until rice is cooked.
5Stir in pepperoni and heat though
6Place in a bowl sprinkle with fresh Parmesan Cheese and place a slice of provolone on the top.. Let it melt in..
7U can use reg pepperoni, and shredded cheese. You can put it in the pot to heat and melt I do the slices for less mess. The small pepperoni is nice for bit size.. Experiment.. Enjoy you will love this soup.
