Italian Sausage Pizza Soup

this is very hearty very good soup for the cold days soon to come.

1 lb
italian sausage
1 c
chopped onion
1 c
1 c
thin sliced carrots
1/2 tsp
1 1/2 c
sliced zucchini
3 Tbsp
parsley(dry or fresh)
3 clove
of slivered garlic
5 c
beef broth
2 c
peeled, chopped tomatoes or 1 can of italian tomatoes
1/2 tsp
basil leaves
2- 8 oz
cans of tomato sauce
8 oz
frozen tortillinis
green peppers cut into 1/2 in. pieces

Directions Step-By-Step

Remove casing from Sausage, brown in a 5 qt. Dutch oven. remove sausage and drain. Reserve 1 Tablespoon of the grease in dutch oven. Saute onion and garlic in drippings until tender. Add other ingredients except tortillinis, zucchini,parsley and green pepper. Bring to a boil, reduce heat and simmer uncovered for 30 minutes. Skim fat from soup, stir in zucchini, tortillini, parsley and green pepper. simmer covered an additional 35-40 minutes or until tortillini are tender.
Sprinkle parmesan on each serving.
