Ingredients

2 - 3
"links" smoked turkey sausage (i use one 14 oz. pkg. butterball turkey smoked sausage, 60% less fat)
1/2
medium head cabbage, coarsley chopped
1
medium onion, coarsely chopped
1/2 - 1
red or green bell pepper, coarsely chopped
1
15 oz. can black beans, drained and rinsed
1
14.5 oz can diced tomatoes with basil, garlic and oregano
1
can kidney beans (if desired)
1 tsp
minced garlic
seasonings of your choice: salt, black pepper, mrs. dash, perfect pinch garlic and herb, oregano (i put all of it - the mrs. dash and perfect pinch are both salt free)
2 - 3 c
water

Directions Step-By-Step

1
Slice smoked sausage into thin slices and add to a stockpot or large saucepan. Chop cabbage, onions and bell pepper and add to the sausage. Add remainer of ingredients. Cook on medium heat until vegetables are tender, about 30 - 40 minutes. You may have to add a bit more water (or a can of low fat chicken broth, if you prefer) if the liquid in the pot cooks down and it's not soupy enough for you.
