Hearty Potato Soup

I was left over baked ham. It's quick and easy and my family loves it.

Ingredients

2 c
ham pieces cut up into bite sizes
8 to 10 medium
potatoes medium, cut up 1/4 size
1 large
onion ,cut up
1 medium
bell pepper,cut up
1/2 c
celery, cut up
1 1/2 c
baby carrots
2 Tbsp
red wine vinegar
salt and pepper to taste
4 c
water

Step-By-Step

1In a dutch oven or large pot, combine ham peices, onion, bell pepper, celery, and salt and pepper. Add 4 cups of water. Bring to a boil.

2Add potatoes, carrots and red wine vinegar. Cook on medium heat for 15 minutes or until potatoes and carrots are fork tender.

3Serve with crackers or cheese toast.
