Ingredients For garlic soup

  • 12 clove
    garlic, peeled & smashed
  • 2 Tbsp
    olive oil, extra virgin
  • 1 stick
    butter
  • 1 lg
    onion, finely chopped
  • 1/4 c
    all purpose flour
  • 1 Tbsp
    white wine vinegar
  • 32 oz
    chicken stock
  • 32 oz
    water
  • 2 x lg
    egg yolks, beaten
  • SERVE WITH:
  • croutons

How To Make garlic soup

  • 1
    Melt butter & oil in a large pot, add garlic & onions; cook over medium heat for 20 minutes.
  • 2
    Add flour & make a roux; cook until light golden brown. Add vinegar, stock & water; simmer 30 minutes.

    When ready to serve, whisk in egg yolks (don't allow it to boil); cook 1 minute.

    Add croutons to bottom of bowls & pour soup over.
