Ingredients For garlic soup

12 clovegarlic, peeled & smashed

2 Tbspolive oil, extra virgin

1 stickbutter

1 lgonion, finely chopped

1/4 call purpose flour

1 Tbspwhite wine vinegar

32 ozchicken stock
-
32 ozwater
-
2 x lgegg yolks, beaten

How To Make garlic soup

1Melt butter & oil in a large pot, add garlic & onions; cook over medium heat for 20 minutes.

2Add flour & make a roux; cook until light golden brown. Add vinegar, stock & water; simmer 30 minutes.

3When ready to serve, whisk in egg yolks (don't allow it to boil); cook 1 minute.

4Add croutons to bottom of bowls & pour soup over.
