Times are hard and being economical is on the top of my list. Don't let the turkey carcass go to waste! Very little prep time and very delicious!

Stove Top

Ingredients

carrots, chopped(chunky)
3
celery, chopped(chunky) (include leaves)
1
onion, chopped(chunky) (include skins)

bay leaves
1
turkey carcass (leftover)
water (fill until turkey is covered)
1 pkg
mixed vegetables, frozen
1 pkg
egg noodles
salt and pepper to taste

Directions Step-By-Step

Put first 5 ingredients into a large stock pot. over with water. Bring to a boil on high. Skim off foam and turn onto simmer. Cover and let cook for 5-6 hours. No need to tend to it while it is cooking! Cover and check now and then to add more water if needed. Strain the stock and discard the bones and vegetables. Do not try to use these vegetables as they will have zero taste (all the nutrients are in the stock). Return stock to stove top and add pkg of vegetables. Return to boil and add noodles and cook according to package instructions. Your house will smell wonderful and you have a tasty, nutrient dense warm meal! Enjoy!
