This recipe is very similar to an oyster stew recipe, that my mom or grandmother, would make on Christmas Eve. The recipe came from Better Homes and Gardens, Family Favorites, Made Lighter.

Ingredients For oyster stew (lower fat)

  • 1 pt
    shucked oysters
  • 1/8 tsp
    pepper
  • 1
    dash salt
  • 1 can
    (12 oz) evaporated skim or low-fat milk
  • 1 c
    skim milk
  • Tbsp
    margarine or butter, cut into 4 pieces (optional)

How To Make oyster stew (lower fat)

    In a large saucepan, stir together the undrained oysters, pepper, and salt. Cook over medium heat about 4-5 minutes, or until oysters are plump and opaque. Stir in the evaporated skim milk and skim milk. Cook, and stir over medium heat, until heated through. If desired, top each serving with a piece of margarine. Makes 4 servings.
