Ingredients

2 stick
unsalted butter
1 c
all purpose flour
8 c
whole milk
5 large
potatos, baked
2 lb
bacon, cooked and crumbled
3 c
cheddar cheese, shredded
2 c
sour cream
1 bunch
green onions, thinly sliced
1 Tbsp
kosher or sea salt
1 Tbsp
ground black pepper
1 clove
garlic
3 1/4 c
grated parmesan cheese

Step-By-Step

1Ensure potatoes have already been baked, cubed and skin removed
2Melt butter in large pot over medium/high heat. Add Flour and whisk to combine until thickened.
3Whisking continuously, slowly pour in the milk and whisk until mixture is smooth.
4Add all remaining ingredients and lower heat to medium. Stir until cheese is melted and soup is warm enough to serve.
5Top bowls of soup with a few shreds of cheese, bacon bits and green onion.
