I love soups! I love potato soup, and I love fresh dill. This is everything I love rolled into one.

Ingredients

7 large
potatos, peeled and cubed
2 large
onions, chopped
1 bunch
scallions, chopped
3 bunch
or more fresh dill
2 Tbsp
butter
1 pt
heavy cream
2 c
sour cream
white pepper, to taste
salt, to taste
fresh parsley for garnish, chopped
fresh dill for garnish

Step-By-Step

1In a large stock pot or Dutch oven cook potatoes and onions in boiling water until potatoes start to fall apart. Strain and return to pot.
2Add scallions, dill, butter and cream. Cook 10 minutes.
3Stir in 1 cup sour cream, white pepper, and salt. Cook and heat through for 2 minutes.
4Garnish each bowl with dill, parsley and sour cream.
