Ingredients For potato dill soup

  • 7 lg
    potatos, peeled and cubed
  • 2 lg
    onions, chopped
  • 1 bunch
    scallions, chopped
  • 3 bunch
    or more fresh dill
  • 2 Tbsp
    butter
  • 1 pt
    heavy cream
  • 2 c
    sour cream
  • white pepper, to taste
  • salt, to taste
  • fresh parsley for garnish, chopped
  • fresh dill for garnish

How To Make potato dill soup

  • 1
    In a large stock pot or Dutch oven cook potatoes and onions in boiling water until potatoes start to fall apart. Strain and return to pot.

    Add scallions, dill, butter and cream. Cook 10 minutes.

    Stir in 1 cup sour cream, white pepper, and salt. Cook and heat through for 2 minutes.
  • 4
    Garnish each bowl with dill, parsley and sour cream.
