Creamy Potato Soup

This is a very creamy and delicious soup. Some times I just make it without the ham... I like it that way also.

Ingredients

3 1/2 c
potatoes peeled and diced
1/3 c
celery diced
1/3 c
onion, finely chopped
2 c
cooked ham, diced
salt and pepper to taste
5 Tbsp
butter
5 Tbsp
flour
1 c
heavy cream
1 c
half and half or milk

Step-By-Step

1Cook potatoes in salt water until tender. Drain and set aside.
2In separate saucepan, melt butter over medium-low heat and saute celery, onion, salt and pepper.
3Whisk in flour stirring constantly for 1-2 minutes until vegetables are tender and flour has cooked lightly. Slowly whisk in half and half or milk. Continue whisking until mixture begins to thicken.
4Add cream and continue stirring until soup is creamy. Add in ham and potatoes and stir until blended. Salt and pepper to taste.
