Creamy Jack Mushroom and Onion Soup

Ingredients

8 c
beef broth
2 large
onions thinly sliced
8 oz
fresh mushrooms diced
1/2 c
flour
1/2 c
water
1 c
heavy cream
2 c
shredded monterey jack cheese
salt and pepper to taste

Step-By-Step

1Add beef broth to large Dutch oven. Bring to a boil. Add onions and reduce to a simmer and simmer on med low for 30 minutes. Add mushrooms and simmer 15 more minutes.
2Mix flour with water and add to soup to thicken. Cook about 5 minutes. Add heavy cream and bring back to a boil. Reduce to simmer and simmer 5 more minutes.
3Add 1 1/2 cup cheese and stir until melted. Add salt and pepper to taste. Serve top with remaining cheese.
