Ingredients

2 1/2 - 3 lb
bone-in chicken pieces
2
celery stalks, with leaves, cut into chunks
2
medium carrots, cut into chunks
2
medium onions, cut into chunks
2
bay leaves
2
chicken bouillon packets
1 tsp
chicken seasoning
1 tsp
parsley
1/2 tsp
coarsely ground pepper
2 qt
cold water

Step-By-Step

1Place all ingredients in a large pot. Slowly bring to a boil, reduce heat, and skim off any foam.
2Cover and simmer for 2 1/2 to 3 hours.
3Remove chicken and set aside.
4Strain broth, discard vegetables and seasonings, strain again. Refrigerate to allow fat to rise and harden. Skim fat from surface before using.
5Remove meat from bones and save for another use, if desired.
