Zucchini /Rice soup

The first time i canned this i labeled it curry soup.Just to see if children could tell it had zucchini in it.Answer NO. served with thick sliced toasted french bread it's a meal

zucchini chopped in 1/2 inch pieces
4 c
onion chopped
4 clove
garlic chopped fine
1/2 c
20 c
chicken broth
1 c
rice white long grain
2 Tbsp
curry powder

Directions Step-By-Step

Trim & discard ends of zucchini chop .In a large stock pot saut'e zucchini,onion & garlic in margarine until tender.Add broth bring to a boil add rice & curry powder lower heat.Simmer for 25-30 mins.nice soft veggies in small batches puree soup. in blender.Return to pot add salt,pepper to taste boil 5 mins. before filling jars.
1/2 inch headspace in jars makes 7 quarts.Process in pressure canner at 10lbs of pressure for 40 mins.This makes a nice soup some times we add alittle water when we warm it
