Tex-Mex Pork Stew

A very tasty pork stew.

pinch tips: Slow Cooker/Crock Pot Hints




1 1/2 lb
boneless pork shoulder -- cut into bite size cubes
3 to 4 medium
red potatoes -- cut into 1in. cubes
1 (8 oz) can(s)
green chili peppers
1 medium
red bell pepper -- diced
1 medium
green bell pepper -- diced
1 medium
purple onions -- diced
1 (15 oz) can(s)
diced tomatoes
1 c
vegetable broth
2 Tbsp
apple cider vinegar
2 Tbsp
olive oil
1 clove
garlic -- minced
1 tsp
fresh ground black pepper
1 tsp
1 Tbsp
adobo seasoning
2 tsp
cilantro -- dried

Directions Step-By-Step

Heat olive oil in a skillet and brown your pork.
Layer all of the ingredients in crock pot and stir well.
Cover and cook until meat is tender for about 6 to 8 hours.
