Simple egg drop soup

- 5 c
- bouilion cubes
- whole eggs (or 4 whites)
- 2 Tbsp
- soy sauce, low sodium
- scallion, sliced thin on an angle
- 1 Tbsp
- cornstarch (optional)
1Bring water to a boil, add bouillion.
2In a seperate dish wisk eggs together. Slowly add egg mixture to boiling water while slowly stirring.
3*Optional: To thicken soup, mix 1 tblspn cornstarch with 1 tblspn cold water until starch dissolves. Lower heat under soup and slowly stir in cornstarch mixture. Return to a simmer and let cook for 1 more minute.
4Stir in soy sauce. Serve garnished with sliced scallion.
