3apples, peeled and chopped

1onion, finely chopped

2squash, frozen, cooked, thawed
How To Make quick sweet and tangy squash soup

1Toast the garlic, if used, in a few drops of olive oil.

2Add the chopped onion, saute in part of the stock.

3Add remainder of stock and rest of ingredients.

4Cook, uncovered, over medium heat until apples have cooked down and soup has reduced to a light creamy consistency.
