This is one that the neighbors go crazy when I make it and the scent floats out to the street. Lovely dish to come home to.

Slow Cooker Crock Pot

Ingredients

2 lb
lamb stew meat, 1 inch dice
1 3/4 lb
white potatoes cut into 1 inch pieces, peeled(optional)
3 large
leeks, whites only, halved, washed and thinly sliced
3 large
carrots, cut into 1 inch pieces, peeled(optional)
3 stalk(s)
celery, thinly sliced
14 oz
can reduced sodium chicken broth
2 tsp
chopped fresh thyme
1 tsp
salt
1 tsp
freshly ground pepper
1/4 c
fresh parsley leaves chopped
1/2 c
frozen green peas

Step-By-Step

1Combine all ingredients except parsley and peas in a 6 qt slow cooker. Put lid on an cook until fork tender, about 8 hours
2Add peas, cook on high for 20 minutes
3Stir in parsley and serve with crusty bread
