FRESH TOMATO SOUP...SIMPLE FARM STYLE
Nancy J. Patrykus
Great with a grilled cheese sandwich.
Simple and easy, a gift from the Gods...Enjoy.
- 2 Tbsp
- olive oil
- 1/2 c
- onion .....chopped small
- 1 Tbsp
- 3 lb
- fresh ripe tomatoes skinned, cored, and coarsley chopped to equal 7 cups.
- 1-1/4 tsp
- 1/2 tsp
- freshly ground black pepper
- water or milk ..if needed
Add onion sauté for about 3 minutes until onions just starts to lightly brown.
Bring to a boil, reduce heat, cover and simmer until tomatoes are very soft.
Add I little milk or water if necessary.
Serve immediately, or chill then re-heat when ready to eat.
Normally I serve grilled cheese sandwiches with this soup.
As children my brothers and I tore up slices of white(WONDER)bread, and the soup was served in a tall glass.
We didn't have bowls then.
We even ate our cereal(oatmeal) from a glass...
HA! The good ole days.. The 30's
Now I like to add a little butter, a spoonful sitting on the top!....YUMMY!!
