Crock-Pot Sausage and Potato Soup

I have seen various soup recipes using smoked sausage and potatoes. I combined ingredients from a few to come up with this one. You can add or subtract any ingredients according to your taste.

Ingredients

12 oz pkg
hillshire farms beef lil smokies, halved
6-8 small
red potatoes quartered,
2 Tbsp
minced garlic
2
ribs celery, sliced
1 pkg
dry onion soup mix
1 can(s)
condensed cream of mushroom soup
1 medium
red bell pepper, seeded and diced
1 can(s)
14.5 ounces; diced tomatoes, undrained
1 can(s)
15.25 ounces corn, drained
4 c
chicken broth
1 tsp
dried thyme
1 tsp
salt
1 tsp
freshly ground black pepper

Directions Step-By-Step

Place cut sausage, potatoes and vegetables into crock pot.

Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth)
Pour over vegetables and sausage in crock pot.

Cook on Low for 6-8 hours or High for 3-4 hours.

**OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.
