Chunky Potato Ham Soup

we all love this soup on cold days its great served with cornbread

Ingredients

2 Tbsp
butter
3 medium
yukon gold potatoes, peeled, cubed 1/2 inch
1 large
leek, cleaned, trimmed, sliced 1/8 inch
2 medium
carrots, peeled, sliced
1 tsp
finely chopped fresh garlic
12 oz
ham, cubed 1/2 inch
1
(48 oz) carton chicken broth
1/2 tsp
thyme, leaves dried
1/4 tsp
salt
1/8 tsp
pepper
1/3 c
fresh chopped parsley

Step-By-Step

1melt butter in 10 inch skillet until sizzling, add potatoes, leeks, carrots and garlic. cook over medium high heat just until leeks are tender (5-7 minutes).
2place vegetables and all remaining ingredients except parsley in slow cooker. cook on low for 4-6 hours or high for 2-4 hours, or until potatoes are tender. just before serving, stir in parsley.
