Loaded Baked Potato Soup

My favorite potato soup recipe and so easy to prepare

Ingredients

4 large
baking potatoes
2/3 c
butter, room temperature
2/3 c
flour
6 c
milk
3/4 tsp
salt
1/3 tsp
pepper
1 c
shredded cheddar cheese
12 slice
bacon ( cooked and crumbled )
4
green onions ( chopped finely )
1
sour cream ( 8 oz )

Step-By-Step

1Bake potatoes 400 degrees for 1 hour. Let cool. Cut in half lengthwise. Scoop out and reserve.

2Melt butter in large pot over low heat. Gradually add flour, stirring until smooth.

3Add milk, cook until thick and bubbly. Stir in potatoes, salt & pepper, cheese, bacon and onions.
Cook until heated well but DO NOT BOIL.
Stir in sour cream.
