Ingredients

1 pt chicken stock
2 large potatoes small diced
1 large leek small diced
1 pt half and half
2 c snow peas chopped
1 bunch scallions chopped
2 celery ribs diced
5 slice bacon chopped
1/2 c sherry
1/2 c pistachio nuts, chopped
salt and pepper to taste
1/4 c roux

My wife found this in one of her magazines about 20 years ago.Its magically delicious.

 

Directions

Saute bacon and vegetables except the snow peas and add to stock.

Add the sherry and when the potatoes are tender add the snow peas,pistachios,half and half and salt and pepper.

Bring to a boil and thicken with the roux.

I was thinking by the name it would be some kind of mushroom soup, but this sounds good. I think if I make it I will add some saute baby button mushrooms and see how it comes out.

Hi sallye I think ther are know wrong ways to make a recipe,theres only the way you like it.I have added shiitake mushrooms before and its great.
Make it your owen and enjoy.

Karl, I made your soup the other day for lunch with the following exceptions: I added about a dozen sliced baby bellas and deleted the pistachios. My DIL absolutely loved it. I thought it was pretty fine, too, but next time I will add the nuts as your recipe calls for.

I sauted them before I added to the soup. But I think leaving the nuts out was a mistake (I would have liked that little crunchy taste).

This soup sounds wonderful, Karl. I am going to have to make this ASAP! Never heard of adding pistachios to soup before, but why not? I love them! I will probably leave out the sherry, as I don't keep it on hand. I hope it won't make a difference. Great recipe!
