Ingredients

tomatoes

onion, chopped

celery stalk, chopped

chicken broth
1 Tbsp
tomato paste
1/2 tsp
basil, dried and crushed
1/4 tsp
pepper
1/2 tsp
salt
1/2 c
yogurt

Step-By-Step

1Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt; simmer uncovered 30 minutes.

2Strain to remove tomato skins and seeds.

3Adjust seasonings and garnish with spoonfuls of yogurt.

4NOTE: May substitute 2 pounds Italian plum tomatoes in place of fresh tomatoes.
