Feel Better Soup
Just what the name says, this soup is perfect if you are feeling under the weather. Light enough to not be over-filling, and hearty enough to keep you satisfied. I made this for the first time when my boyfriends daughter had the flu, now she requests it :)

- cream of celery condensed soup
- 2 can(s)
- chicken broth or vegetable broth
- stalk celery, chopped
- 1 medium
- carrot or about 8-10 baby carrots, chopped
- 1/4 c
- frozen peas
- green onion, sliced
- 1 c
- (generous) dry wide egg noodles
- 1/2 tsp
- ground black pepper
- 1 pinch
- dried thyme
- 1 pinch
- dried parsley
1Mix together the soup and broth in a 2 QT saucepan. Add the carrots celery and onion. Bring to a boil over medium heat, stirring constantly.
2Reduce heat to low, cover and simmer 10-15 minutes until carrots are almost fork tender. Add noodles, herbs and peas. Continue to simmer for 5-10 minutes, until noodles are Al Dente. Remove from heat and let sit 2-3 minutes. Stir and serve.
3*note* The liquid may appear to be separating, that's OK, after its cooled down and stirred it goes to a creamy texture.
