Easy Potato Soup

Around our house, soup is the comfort food. Potato soup holds the place as the ultimate comfort. It's fast and easy and lends itself to great variation and side dishes. Paired with grilled ham and cheese sandwiches, a salad or served with a big pan of cornbread, it is always a hit.

Ingredients

5-6 medium
potatoes, peeled and cubed
1 small
onion, chopped
1 medium
carrot, sliced
1 medium
celery stalk, sliced
1 can(s)
chicken stock (optional, may use water)
1 tsp
salt (to taste)
1/8 tsp
pepper (to taste)
2 Tbsp
butter (optional)
3/4 c
milk

Step-By-Step

1Place potatoes, onion, carrots and celery into 2 quart pan.
2Add chichen broth or water to just almost cover vegetables.
3Add salt and pepper.
4Cover and cook on med high heat until vegetables are tender.
5Uncover, add butter and milk and bring back to a simmer.
6Serve hot. May garnish with grated cheese.
