This is a recipe from Paula Dean. It is sooo delicious that I could eat the whole pot in one sitting! Not to mention the homemade croutons that are scrumptious.

Ingredients

small onion diced

large pimientos diced
3 Tbsp
butter
1 1/2 c
chicken broth
2 c
cream
2 c
grated cheddar cheese
1/2 c
green onions
salt and black pepper
dash(es)
cayenne pepper (optional)

FOR THE HOMEMADE CROUTONS

loaf of french bread cubed
peanut oil for frying
parsley and parmesan (optional

Directions Step-By-Step

In a saucepan, saute onion and pimientos in butter for 5-7 minutes

blend in flour and then add stock and cream--cook until thick--add cheese and stir until melted--add 1/2 cup green onions, salt and pepper to taste and cayenne pepper if desired

allow bread crumbs to sit overnight to become stale--heat oil to 350 degrees and add bread cubes and fry, stirring constantly until browned (takes no time at all) remove and drain on paper towels. season and serve--I personally just like these seasoned with salt--ladle soup into a bowl and serve with some croutons on top
