Cream Of Cauliflower Soup

Ingredients

2 Tbsp
butter
1/4 c
onion, sliced
1
celery stalk minced with leaves
1.5 c
chicken broth
1 c
cauliflower, cooked and coarsely mashed
1 c
light cream
pinch
salt
pinch
pepper
1 Tbsp
parsley, fresh and chopped
pinch
nutmeg

Step-By-Step

1Saute onion and celery in butter about 4 minutes.

2Add chicken broth and cauliflower and heat to boiling.

3Add cream, but do not let boil.

4Season to taste and stir in parsley and nutmeg.
