Cream of Brocolli Soup
When I first made this soup, I had a hard time finding white cheddar. Now almost all the stores carry white cheddar! Also, I've tried doubling this recipe and it just doesn't taste the same, so make it a little batch at a time!
- 1 box
- frozen chopped brocolli
- 1 1/2 Tbsp
- 3 Tbsp
- finely chopped onion
- 2 Tbsp
- 2 1/2 c
- 1 tsp
- 1 c
- grated white cheddar tossed with 1 tsp. flour
- a pinch
- cayenne pepper
- 1/8 tsp
1Cook brocolli with onion and drain.
2Melt butter and add 2 tbls. flour.
3SLOWLY add milk and salt until smooth and boiling.
4Add brocolli and grated cheese.
5Bring to boil and season with cayenne and nutmeg.
6Do it exactly in this order to keep it from curdling.
